1. Wash the rice. Place it in a large bowl with tap water to cover by 2 inches. Swirl the rice with your fingers to wash it. Pour off the cloudy water. Continue adding water and swirling the rice until the water comes clean. This may take several washings.
2. Combine the rice and spring water in a large heavy saucepan and bring to a boil.
3. Reduce the heat to a gentle simmer, loosely cover the pot, and cook the rice for 35 minutes, or until tender.
